Cooking demonstrations are currently held every Thursday from 3:00 p.m. to 5:00 p.m.; price varies based upon menu.

Tastes of Summer

   Hey everyone, its Chef Redhead here. I just want to welcome everyone to summer. I love summer time. Fruits are in season, white peaches and other stone fruit start to arrive, Tuscan melons are as sweet as can be and berries are the biggest and sweetest they can possibly get. Not only are fruits coming in but wild salmon season has opened up fully and Halibut season is in its peak right now, not to mention striped sea bass and soft shell crabs are showing up from the east coast and gulf coast. It's an incredible time of the year to get some of the freshest seafood around. And, one thing is for sure, I am going to prepare it so that you will always remember it. Take for instance tonight: we have nice premium red snapper from Hawaii called Onaga. We are going to sauté it with a Moroccan spice, served with almond Valencia rice pilaf, candied lemon confit and honey Madeira braised black figs. Talk about good.


    We also are about to feature a month long promotion called “Taste of Sonoma”. I have found some food vendors up there that have some unbelievable products. CK Lamb, Dry Creek Peach and Produce, Lavender Bee Farm, Redwood Hill Farm & Creamery, Vella Cheese Company, B.R. Cohn Olive Oil & Vinegars, Liberty Duck, and Hardin Gardens are just some of the vendors we are bringing in. LG Vella makes a 12 to 18 month and 2 to 3 year aged Dry Jack that will blow you away. Redwood Hills has some incredible goat cheese and Hardin Gardens specializes in heirloom tomatoes of all varieties. There is nothing better than a thick slice of tomato and a pinch of salt and pepper. Simple and perfect is what that is. We are really going to kick the event off too, starting on July 18th with a Wine Barrel Luncheon and Wine Maker Dinner featuring Clos du Bois. Then that weekend on Saturday we are going have a Gourmet Food and Wine Extravaganza featuring 10 plus wineries, and 8 plus food vendors. Of course all month long I will have daily specials featuring the wines and foods of Sonoma. On August 15th we will conclude the event with a wine maker’s dinner featuring Buena Vista wines.


    Let’s not forget about cooking classes. With July and August being so busy we are only going to be able to have 2 classes in July and 3 in August. The first one July is all about grilling. We will do grilled watercress and melon salad, grilled stuffed lake trout, grilled chocolate apple calzones and to sip on we will have a blackberry sage mint julep. Make’s me thirsty just writing it. In August we will have 2 classes in the beginning featuring the Taste of Sonoma theme. It is going to be a ton of fun. Sign up as soon as you can because there are so few classes and seating will be limited.
